Before the grill ever fires up, the table fills with mezze — small dishes meant for sharing. These are the cool, slow-spooned plates: chickpeas whipped with tahini until silky, aubergines blistered over open flame until they turn smoky and soft, thick strained yoghurt loosened with garlic and fresh mint.
